How lucky I feel to have passed 5 of those years teaching with you in Paris.
I had just started my own business Prêt a Rever, cake design, when a mutual friend said I should pop in and meet chef Eric, nothing ventured nothing gained I did just that, and a few weeks later I found myself teaching my first class at Cook’n With Class.. One thing lead to another and before I knew it I was teaching “all that was sweet.”
The time I spent at Cook’n With Class remains one of the most memorable and enjoyable moments of my career. A turning point in many ways, because you think you know all the ins and outs of your passion until you start to teach it, and teaching here took my knowledge, and love of Pastry to a whole new level. After 15 years in Paris my little family and I are now back in Sydney Australia. My experience has lead me to be working for a major French/Australian food Distribution company, supplying high-end French food products to the Australian food service and retail industry. We are currently developing our own training school which will enable our clients to experience the expertise of the likes of Étienne Leroy, 2017 world champion in pastry and ambassador for PCB, Richard Hawke, International pastry consultant working with us on Weiss Chocolate and Les Vergers de Boiron, Pastry consultant Gael Etrillard, as well as the occasional MOF or Two and so much more.
My biggest memory from Cook’n With Class …the huge smiles on the faces of our clients full of newfound knowledge and proud of their beautiful and delicious creations at the end of the class. Not only had they experienced a fabulous moment creating memories that were better than any souvenir that they could have purchased in Paris, but now they had something that would stay with them for life: understanding, know-how, and a little more passion that had rubbed off onto them from our enthusiastic Cook’n with Class Chefs. Where do I see myself in the future, I believe I will return to teaching again at some point in the future.
A love and understanding of good food, how to eat it and how to prepare it needs to come from our childhood years, and so many children are missing out on those skills, Jamie Olivier’s food revolution is right up my alley, so watch this space…
