Choux Pastry: Croquembouche


It was in 1540 when one of Catherine de Medicis’s pastry Chefs came up with the recipe for Choux pastry or “Pate à Choux”, in French, it became an instant classic French recipe across France and Italy and an essential dessert still today at a French weddings with the phenomenal “pièce montée”, for example.

In our Mad About Choux Pastry class, you will learn the finest Choux pastry recipes and the secrets to the classics that you can recreate at home. With this base, the skies the limit with what you can do with it – you may even invent your own choux dessert or apéritf who knows! 

Remember the croque-en-bouche, that touring pièce-montée of cream puffs, which often makes its presence at French weddings in place of a wedding cake, well, that is thanks to choux pastry as well. 

Class format in 2018

We will create our very own croque-en-bouche (also called croquembouche), which will include:

  • Pâte à choux – choux pastry dough from scratch
  • Custard cream filling (crème patissière)
  • Caramel (for dipping)
  • Nougatine base
  • Learn to make excellent choux pastries from an expert chef

  • Work with tried & tested recipes that can be recreated at home

  • Once the class is finished taste your delicious pastries on-site with a drink and take home the rest with our takeaway boxes

  • Classes taught in English
