Pastry Classes Paris: We are Mad about Choux pastry! Introducing our pastry class dedicated to this versatile French dough. Think cream puff and take that one step further to make it oh so French. 

You have no doubt already tasted them whether as a savory cheesy gougère a cream-filled sweet eclair – yes, that’s right the eclair is part of the choux pastry family as is the famous Paris-Brest and Gateau Saint-Honoré 

This is a dough recipe that will take you from breakfast, lunch, cocktails and even a light dinner. You’ll want to add this your recipe database.

It was in 1540 when one of Catherine de Medicis’s pastry Chefs came up with the recipe for Choux pastry or “Pate à Choux”, in French, it became an instant classic French recipe across France and Italy and an essential dessert still today at a French weddings with the phenomenal “pièce montée”, for example.

In our Mad About Choux Pastry class, you will learn the finest Choux pastry recipes and the secrets to the classics that you can recreate at home. With this base, the skies the limit with what you can do with it – you may even invent your own choux dessert or apéritf who knows! 

Remember the croque-en-bouche, that touring pièce-montée of cream puffs, which often makes its presence at French weddings in place of a wedding cake? Well, that is thanks to choux pastry as well. 

Jan 30th, 2018 class:

You will make several recipes using the pâte à choux which could include, the Paris-Brest, Gougère, chouquettes and more for a total of 4-5 preparations both savory and sweet.

Class format from February 1st, 2018

We will create our very own croque en bouche which will include:

  • Pâte à choux – choux pastry dough from scratch
  • Custard cream filling (crème patissière)
  • Caramel (for dipping)
  • Nougatine base
