Lentil Salad with Orange Dressing

Instructions
This salad is perfect all year long with seared salmon, roasted chicken,
and
our grilled octopus but also just by itself.
Boil the lentils with the bay leaves and the thyme; after 10 minutes add salt and cook until tender. Let rest and cool down.
Press 2 oranges and reduce the juice until you have 3 TBS of syrup.
In a large bowl, add orange syrup, chopped shallots, chopped parsley, chopped garlic, the carrot in small dices, mustard, vinegar, and oil.
Add salt and pepper, whisk well.
Drain the lentils, add the lentils to the orange dressing. Keep in fridge 1 hour before serving with the segment of the last orange.
