Born and raised in Paris and having passed part of his childhood in the french gastronomy capital – Lyon, Chef Antonin, dreamed of pursuing a career in the culinary arts. He cites his Basque grandmother as his main culinary influence and obtaining his degree was his way of honoring this worldly, motorcycle-riding, botanist, and epicurean wizard.

He studied in a cooking school in Paris while simultaneously apprenticing at “la Maison de l’Amรฉrique Latine” with Chef Thierry Vaissiรจres. He has WSET certification (level 2) and can confidently share his wine expertise in his classes as well as during our cheese & wine classes
